Chef creates world's first fish soup made from 100% sustainable ingredients
As the world's population continues to grow, pressure mounts on chefs and restaurateurs to find innovative ways to feed more people without damaging the environment. That's why Chef Alessandro Colombo of Milan's El Chefsito has created a fish soup made from only sustainable ingredients.
"The soup is made with carp, catfish, and pike," Colombo says. "These are all fish that are indigenous to the Milan area and can be sustainably sourced."
Colombo has been working with a local fishermen's cooperative to develop recipes for the soup. The cooperative has agreed to sell him only sustainably caught carp, catfish, and pike.
"The fishermen know that it's important to catch these fish in a sustainable way," Colombo says. "They don't want to harm the ecosystem or jeopardize their livelihoods."
Colombo plans to debut his fish soup at El Chefsito next month. He says it will be a permanent fixture on the menu.

Recipe for French onion and fish soup
Ingredients:
-1 lb. boneless, skinless white fish fillets (such as tilapia, cod, or haddock) -1/2 lb. French green beans, trimmed and cut into 1-inch pieces -1/2 lb. small boiling onions or pearl onions -4 cloves garlic, minced -4 cups low-sodium chicken broth -1/2 cup dry white wine -1/2 teaspoon dried thyme -1/4 teaspoon freshly ground black pepper -3 tablespoons unsalted butter -1/3 cup all-purpose flour -3/4 cup grated Parmesan cheese For the Soup: In a large saucepan or Dutch oven, heat 1 tablespoon of the butter over medium heat until melted. Add the onions and garlic and cook, stirring occasionally, until the onions are softened and beginning to brown, about 8 minutes. Add the chicken broth, wine, thyme, and pepper and bring to a simmer. Cook for 10 minutes to blend the flavors. Meanwhile, in a medium skillet, heat 1 tablespoon of the butter over medium heat until melted. Add the fish fillets and cook until opaque throughout and just cooked through, about 4 minutes per side.
Transfer the fish to a cutting board and chop into bite-size pieces. Add the chopped fish and green beans to the soup and simmer for 5 minutes to heat through. Ladle the soup into bowls and sprinkle with Parmesan cheese before serving.
