Simmer for 10 minutes until the vegetables are soft. Add the ginger and salmon cubes and continue cooking for 5 minutes until the salmon is cooked through. Add the spinach leaves and cook for 1-2 minutes until wilted. Season with salt and black pepper to taste.* Serve hot in individual bowls. Enjoy!
