Fish soup left on doorstep
Neighbors on our street have taken to leaving a pot of fish soup on each other's doorsteps as a way of showing neighborly goodwill. It all started one cold winter evening when I returned home from work to find a steaming pot of fish soup on my doorstep with a note that said "Enjoy! From your neighbors."
Since then, I've started leaving soup on my neighbors' doorsteps, too. It's a great way to show goodwill and get to know your neighbors better. Plus, it's really delicious!
There are all sorts of recipes for fish soup, but I like to keep things simple. My recipe is just a basic fish soup with vegetables and a few spices. You can use any type of fish you like for the soup, but I prefer cod or salmon.
Here's how to make it:
Ingredients: 1 lb. boneless, skinless cod or salmon fillets, cut into cubes 1 onion, chopped 3 carrots, peeled and diced 3 stalks celery, diced 2 cloves garlic, minced 1 bay leaf 1 tsp. dried thyme 4 cups chicken broth or water 1 cup frozen peas Salt and pepper to taste Instructions:
In a large pot or Dutch oven, sauté onions, carrots and celery in olive oil until soft. Add garlic and sauté for an additional minute. Add cubed fish, chicken broth or water, bay leaf and thyme. Bring to a boil and simmer for 10-15 minutes until fish is cooked through. Add frozen peas and salt and pepper to taste. Serve hot with some crusty bread for dipping!
Doorstep fish soup
There's nothing like a piping hot bowl of fish soup to warm the soul on a cold winter day. This dish can be made with any variety of fresh fish, but I prefer to use salmon or cod.
To start, cut the fish into small pieces and place them in a pot or Dutch oven. Add some chopped onion, celery, carrots and garlic to the pot, then cover the fish with water. Bring the soup to a boil, then reduce the heat and simmer for 30 minutes.
Next, remove the soup from the heat and let it cool for a few minutes. Use an immersion blender to blend the soup until it is mostly smooth. If you don't have an immersion blender, you can use a regular blender instead – just make sure to blend the soup in batches so that it doesn't explode!
Finally, return the soup to the stove and heat it until it is once again boiling. Reduce the heat and add some cooked noodles or rice to the soup. Let it cook for a few more minutes until the noodles are tender, then serve hot with some fresh parsley or chives for garnish. Enjoy!
